Cinco de Mayo is my favorite to celebrate because it combines my favorite food – Mexican, with a holiday.
Since today is Cinco de Mayo, I decided to compile a short list of Mexican food twists, that take very little time and effort.
Recently, I found this recipe for mini tamale pies, on Delish’s Facebook page. It’s a recipe for mini tamale pies. I recently made a similar Tamale pie, that I’ll try getting up here on the blog. The fact that they’re cute and small, I’m loving this idea. It is super quick too. What you could do instead of ground beef, is get one of those rotisserie chickens from the grocery store, debone and shred it, and then add the same ingredients.
Skinnytaste is one of my go-to’s if you want to keep your Cinco de Mayo on the lighter side. The author has this great recipe for lightened up Spanish rice.
Having friends over last-minute? Turn it into a fiesta mixology party, and have them whip up their favorite margaritas. You can even turn it into a tasting contest! You can also grab fun porch lights and sobreros from the dollar store and turn it into an outdoor party. Any spare bright fabric or go to your local fabric store for a perfect fiesta table setting.
